August Cookbook Giveaway
Last month the Crispy Cook searched the shelves at Old Saratoga Books and came up with Judith Olney's cookbook "Summer Food" (NY: Atheneum, 1978). To enter the giveaway contest, all one has to do is leave a comment after this post. The winner of the July cookbook giveaway is Melissa of the healthy living and cooking blog, Gluten Free For Good. For the August cookbook giveaway, I am offering a copy of "Light and Spicy", by Barbara Gibbons, (NY: Harper and Row, 1989). This cookbook has lots of low-calorie, full-flavored recipes, and as a sampler, the cookbook's recipe for Canary Islands Mojo Sauce will follow. Canary Islands Mojo Sauce
1/2 cup loosely packed fresh parsley
1/2 cup cider vinegar
4 cloves garlic, finely minced
2 Tbsp. each cumin seeds and Spanish paprika
2 Tbsp. olive oil
Salt and coarsely ground pepper to taste
Finely mince parsley. Add remaining ingredients and mix well.
The cookbook advises serving this sauce over boiled or baked potatoes, rice or fish.
Makes 1 cup.
