For the August cookbook giveaway, I am offering a copy of "Light and Spicy", by Barbara Gibbons, (NY: Harper and Row, 1989). This cookbook has lots of low-calorie, full-flavored recipes, and as a sampler, the cookbook's recipe for Canary Islands Mojo Sauce will follow. Canary Islands Mojo Sauce
1/2 cup loosely packed fresh parsley
1/2 cup cider vinegar
4 cloves garlic, finely minced
2 Tbsp. each cumin seeds and Spanish paprika
2 Tbsp. olive oil
Salt and coarsely ground pepper to taste
Finely mince parsley. Add remaining ingredients and mix well.
The cookbook advises serving this sauce over boiled or baked potatoes, rice or fish.
Makes 1 cup.

Is the spanish paprika the same as smoked paprika,rather than sweet paprika?.
Can you use ground Cumin rather than the seeds?

The cookbook simply states Spanish paprika, so I would imagine that it is regular old paprika rather than the smoked variety. I would also think ground cumin would be a fine substitute for cumin seeds, although I did buy some cumin seeds for an Indian recipe and they are delightfully crunchy and pop in your mouth with cumin taste so you may want to acquire some in the future for kitchen experimentation.
